Springtime generally means an uptick in fresh egg production for those of us who have laying hens. My girls are no exception, but with the ongoing Local Bite Challenge, we’re counting on eggs as one of our local food standbys. I worked out a trade with a friend of mine to make sure we have more than plenty. She’s been bringing extra eggs for us, so we’re golden. We will not starve. And that is wonderful, except for one teeny, tiny issue: It’s really easy to get tired of eggs. (Scrambled, hard boiled, fried, repeat.)
